Stuffed Bread Sandwich

Healthy, new and exciting recipes are in popular demand these days. The other day when I was struggling to think of making something new and healthy, Aparna suggested that I look at this blog site: http://sobha-goodfood.blogspot.com/2011/10/baked-bread-bites.html
The recipe I saw was both new and healthy. I immediately set out to make it for that day’s evening snack. I checked my fridge to see if I had the necessary ingredients and found that I have to make a few substitutions, which was ok and I was all set to start.
Ingredients
Bread – 16 slices (serves 4)
Tofu – 1 cup grated
Onion – 1 finely chopped
Cumin seeds – ½ tsp
Chilli powder – 1 tsp
Coriander powder – ½ tsp
Garam Masala – ¼ tsp
Chaat Masala – ¼ tsp
Oil – 1 tbsp
Salt to taste
Method
In a pan, heat oil. Add the chopped onions and sauté until they turn translucent. Add all the spices and mix well. Add the tofu and mix well. Cook for 2 minutes and remove from stove. Allow it to cool nicely.
Cut the sides of the bread. Take slices of bread and apply little water on the sides for sealing. Keep the tofu stuffing on one slice, place the other slice on top, and press the sides gently. Repeat the process for all the slices.
Preheat the oven to 400 F. Take a baking tray and grease it lightly. Place the stuffed bread on the baking tray. Brush very little oil on the top. Bake for 12 – 15 minutes or until they turn slightly brown.

Enjoy this mouth-watering snack with tomato sauce.
Note: You can also apply mint chutney or basil pesto on one slice for added flavor.
